Tomato Egg
Description
Tomato Egg is an easy dish to make, perfect for any meal.
Ingredients
Serving size: 5 people
Sauce
- 2 tomatoes, chopped into rough chunks
- 3 tbsp ketchup
- 1 stalk spring onion
Eggs
- 5 eggs
- 1 tsp salt
- 1/2 tsp white pepper
Instructions
- Chop the spring onions
- Cut the tomatoes in chunks
- Whisk 5 eggs with 1 tsp salt and 1/2 tsp white pepper
- Add oil and then half of the chopped spring onions, followed by the tomatoes
- Stir fry for a minute then add in 3 tbsp ketchup. Give it a good stir
- Add sugar, pour in 50ml water and simmer for 30 seconds. Dish out and set aside
- In a clean non stick pan, heat up 2 tbsp oil on medium heat and pour in the egg mixture
- Using a spatula, push the cooked egg from the sides to the centre until no visible liquid egg remain. You will achieve a ‘rippled’ scramble egg
- Pour the cooked tomato mixture and mix it quickly with the scrambled egg
- Sprinkle the remaining half of the chopped spring onions. Serve hot.
