Okra Stir-fry (Lady Finger)
Description
One of my favourite vegetables :)
Ingredients
Serving size: 4 people
- 250g okra, sliced cross-wise
- 1 tomato, diced
- 2 cloves garlic, finely chopped
- 1 onion, diced
- 1 carrot, cubed
- 1 tbsp vegetable oil
- 2 tsp light soy sauce
- pinch of salt
- dash of white pepper
Instructions
- Prepare aromatics and vegetables
- Pour vegetable oil and stir fry garlic and onions until golden brown
- Add carrots first and stir fry for about a minute. Then add okra and stir fry for another minute
- Add in tomatoes and pour soy sauce. Toss and stir fry for 2-3 min
- Season with salt and white pepper to taste
