Lemon Chicken (柠檬鸡)

Ingredients
Serving size: 5 people
Deep fry
- 500g chicken breast, cubed
- 2 cups vegetable oil
- 1/2 cup flour
- 1/2 cup cornstarch
Marinade (velvet)
- 1 tsp salt
- 1 tsp white pepper
- 2 tbsp light soy sauce
- 1 tbsp corn flour
- 1 tsp sesame oil
- 1 egg
- 1 tbsp shaoxing wine
Lemon sauce
- 1/2 lemon, juiced
- 2 tsp plum sauce
- 1 tbsp white sugar
- 1/2 cup water
- 1 tbsp soy sauce
- 2 tsp sesame oil
- 2 tsp lemon zest
Garnish (optional)
- Toasted white sesame seeds
- Sliced green onions (2 stalk)
- Parsley
- Lemon slices
Instructions
- Combine the chicken cubes with the marinade ingredients in a bowl and marinate for 30 minutes
- Combine the sauce ingredients in a bowl and set aside
- Combine the coating ingredients together in a bowl. Coat chicken cubes with flour mixture
- Heat vegetable oil in a wok over high heat
- Fry chicken cubes for about 5 minutes or until lightly golden. Drain on a paper towel-lined platter
- Double fry until golden brown and dish out
- Add about 1-2 tsp of oil in the pan, then add all the sauce ingredients. Stir well to combine over medium high heat. Heat for 2-3 minutes or until the sauce has thickened
- Place chicken cubes on a serving plate, then drizzle over with lemon sauce. Garnish and serve hot
